Both consumers and foodservice professionals alike share concerns over foodborne illnesses and preventing such outbreaks. The cleanliness of food preparation areas, surfaces, and wares used to prepare and serve food are of utmost importance. In fact, food safety compliance was the single most important issue among over 700 foodservice professional respondents surveyed recently by Kline. Kline has surveyed nearly 750 end users, including those in the restaurants/hospitality, healthcare, industrial, retail, and education sectors, for the 2017 edition of its well-regarded Foodservice Cleaning Products USA study. The results confirm the importance of food safety compliance in commercial kitchens and food preparation areas. Among end users of foodservice cleaning products, food safety compliance was the single most important trend impacting their business. Employee training and compliance in relation to cleaning and guest experience ranked a close second. Minimum wage increases, green cleaning, and IoT and smart/Internet-enabled warewash machines held secondary importance. Social media and its impact on the business, such as Yelp, Open Table, and other reviews/images, was the least important trend among foodservice cleaning products end users.Continue reading

The recent food poisoning outbreak at Chipotle Mexican Grill restaurants across multiple states has caused hundreds of consumers to become sick from E. coli, norovirus, and salmonella poisoning. Initially, in October 2015, the problem was thought to be contained to 11 restaurants in Washington and Oregon. The restaurant chain proactively closed over 40 locations in those two states to deep clean, sanitize, and restock with all new ingredients. Since then, there have been 11 additional states where people have reported illness after eating at Chipotle restaurants, including over 140 cases of norovirus, mostly among college students in Boston, MA. The problem is so widespread it has triggered a grand jury subpoena and a federal investigation lead by the U.S. Department of Justice and U.S. Food and Drug Administration.Continue reading
